El Fogón is a family kitchen built around one thing: the hearth. Every plate — from breakfast to the last flan of the night — passes over real wood fire before it reaches your table.

Our story

A hearth that never went out.

El Fogón started as a single wood-fired comal in the backyard of the Delgado family, cooking for neighbors on Sunday afternoons. Three decades later, the fire is still the center of everything — now inside a small dining room that still feels like someone's kitchen.

Every recipe on the menu is one the family actually eats at home: the same salsa roja, the same slow-braised birria, the same hand-pressed tortillas made fresh through service. Nothing here is built for show. It's built to be eaten.

01

Real wood, real fire

Mesquite and oak, tended by hand, all day, every service.

02

Masa made this morning

Corn is nixtamalized and pressed in-house before doors open.

03

A table for everyone

Regulars, first-timers, and whole families — all seated the same way: fast and warm.

The day at El Fogón

One fire, three services.

7:00

Morning

Breakfast over the coals

Chilaquiles, huevos rancheros, and pan dulce warmed on the comal — the same fire that'll be braising dinner in twelve hours is already going at sunrise.

Midday

Tacos off the comal

Fast, hot, and built to order — al pastor shaved straight from the trompo, cilantro and onion, a squeeze of lime, gone in three bites.

Evening

Slow plates, long tables

Birria simmered since morning, whole grilled fish, and a flan that comes out sixty seconds before it hits the table. This is where the family gathers.

The birria alone is worth the drive. You can taste that it's been over real wood, not a grill.

Brought my whole family for a Sunday dinner and it felt like eating at someone's actual house.

The tortillas are made in front of you. Small thing, but it changes everything about the tacos.
